Pete’s Recipes: September 2017
Get the blueberries fresh while they’re here! Local and fresh foods are the best! Here’s a nice little dish that is super good!
36 oz. Oregon blueberries
4 tablespoons honey
1 1/2 cups Bob’s Red Mill quick oats
1 cup chopped macadamia nuts or hazelnuts
1 cup almond flour
1/4 cup melted grass-fed butter or ghee (we like spear and arrow ghee)
1/4 cup melted coconut oil
1/4 teaspoon nutmeg
1/4 teaspoon ginger
Preheat oven for 375 degrees. Wash blueberries and put in a large Pyrex pan. Mix other ingredients in bowl, then top blueberries with mixture. Bake for 20-25 minutes, or until top is golden and blueberries bubble. Enjoy with Luna & Larry’s coconut ice cream if desired.
